Brief description:

The lokoumi resembles the kourabie (a Christmas almond butter biscuit) and is traditionally offered as a treat to wedding guests in Cyprus. The making of the Athienou Wedding Delight and the tradition of offering it as a treat at weddings is one of Cyprus’s traditional wedding customs. According to testimonies, in the 20th century in Athienou, the girls gathered in each other’s houses to make these treats. The lokoumia (plural) are made in several parts of Cyprus, with variations in the recipe, but what distinguishes Athienou is the fact that they continue to make the traditional recipe. The ingredients used in the preparation of the traditional recipe are flour from local wheat, coarse semolina, baking powder, butter, water in which cinnamon sticks have been boiled, rosewater and cognac.  For the filling they use almonds from Athienou, roasted and mixed with cinnamon.
